It has been awhile since I have posted any recipes, so here we go!
This simple quinoa salad recipe goes great with chicken or fish dishes. It is quick to make, super healthy, and utilizes ingredients you have on hand.
This recipe is enough for about 2 people with some leftovers. For a party or large group, double the recipe.
1 cup cooked quinoa
1 cup (or more) chopped veggies. Including but not limited to: tomatoes, zucchini, corn, mushrooms.
2 tbsp. your favorite vinegar-based salad dressing. Ex. Italian, sun-dried tomato, oil & vinegar etc.
1-2 tbsp. Parmesan cheese
Salt and pepper to taste
Red pepper flakes *optional
Cook the quinoa as per instructions on the bag or box. Meanwhile, chop and prepare your veggies.
When the quinoa is finished cooking, transfer it to a large bowl. Dump all your veggies in the bowl as well.
Add the salad dressing, parmesan cheese, and red pepper flakes (if desired).
At this point taste it before adding the salt and pepper or more dressing. Depending on the dressing you use it may already be salty enough.
Serve and enjoy warm, or cold!
