Eggs and Baked Beans Breakfast!

This is a easy and hearty breakfast for a weekend brunch!

All you need  is:

3-4 Eggs

1 can baked beans – pork and beans in molasses or tomato based if you prefer

1/4 onion, chopped

Shredded cheese

Salt and pepper to taste

Tobasco sauce (optional)

Directions: Using a deep frying pan or wok bowl, fry the onion in oil.  Pour in the can of beans and stir them a few times until the onion is mixed in.  Turn the heat down to low.  Make a 3-4 holes in the beans and crack the eggs into them, leaving the yolks in tact.  Sprinkle with Tobasco.  Then, cover the pan and let it cook until the eggs are white and cooked through, about 15 minutes.  Take the lid off, sprinkle with cheese and remove from heat.  Add salt and pepper as desired.  Serve over some thick toast, and enjoy!
