This is a quick and easy pasta sauce, great for a weeknight meal, or any day! Plus it uses very few ingredients, which I love.
1 yellow bell pepper
1 red bell pepper
1 green bell pepper
4 hot or mild italian sausages
1/4 cup water
1/4 cup flour
cracked black pepper
Optional ingredients: Parmesan cheese, red pepper flakes
Cut up the sausages into small, bite-sized pieces. Brown them in the frying pan. Meanwhile, chop up the bell peppers into thin but long pieces like the ones you can see in the image above. Once the sausage pieces are cooked through, add the bell peppers and let them cook for a few minutes. Add the water and flour and stir until flour is dissolved. Turn the temperature to med-low and simmer for a few minutes, stirring often, until the water has cooked off and you have a sauce. At this point add black pepper to taste, and some Parmesan cheese and/or red pepper flakes if desired. If you want to have more sauce just add more flour and water at the beginning stage, if you do it at the end the flour will become clumpy but it still tastes good, haha.
Here I have served my Sausage and Bell Pepper sauce over spaghetti squash but it is great with any kind of pasta of your choice.
