1 head iceburg lettuce
1 can water chestnuts, chopped up into smaller pieces
1 Red bell pepper
1 lb ground pork
1/4 cup hoisin sauce
A splash of low sodium soy sauce
4 cloves minced garlic
about the same amount of minced ginger
1 tbsp Olive oil
In a small frying pan heat the oil and then add the ginger and garlic and cook until slightly brown. Add the hoisin sauce, turn the head down to medium low and simmer the hoisin sauce with a splash of soy sauce.
In a separate pan begin frying the ground pork and bell pepper. When pork is nearly cooked through add the water chestnut and fry for a few more minutes. Turn off the heat and add the sauce, stir until fully coated.
For the lettuce I used a head of iceburg lettuce and tried to carefully peel off each leaf so that it stayed in tact. This was pretty hard so a lot of them wound up being just ripped pieces but they were big enough for a scoop of meat and tasted good, so, good enough!
If you know an easier way to do the lettuce let me know!
