With grilled zucchini from my garden!
This is one of my favourite ways to serve hamburgers because it is lower carb and I always have tortillas on hand so I don’t have to buy hamburger buns separately. I learned about it when I lived in New Mexico which seems appropriate.
You can make any kind of hamburger you want with any toppings you want, just don’t overload it and keep the patties fairly small or you will not be able to fold up the tortilla, or it may split! Also if your tortillas are a bit stale they will split. You can try softening them up in the microwave if you wrap it in a paper towel and microwave for about 15 seconds.
Anyways this is just a simple recipe for making the burgers on the grill! This recipe makes 2 burgers.
First I used about 1/2 lb of ground beef and created fairly small patties, flattening them out. I simply squirted some BBQ sauce on them and a little soy sauce.
I also chopped up my massive zucchini I had just harvested from my garden into thin slices. I then coated them with olive oil and sprinkled them with fresh ground black pepper and some paprika.
After getting the BBQ warmed up I placed the burger patties and the zucchini on the grill on medium heat and grilled them both about 5 mins per side.
In the meantime I prepared the tortillas. Placing one on each plate, I spread some mayonnaise in the center, then stacked the lettuce and tomato on top, right in the middle of the tortilla.
After melting some cheese on top of the patty I placed it on top of the tomato.
I folded up the tortilla into a square pocket, added my grilled zucchini, a side salad, and a biq squirt of ketchup.
On an afterthought it might be good to regrill them for a few minutes after they are inside the tortilla? I haven’t tried it yet but might add some more flavour and a bit of crispiness.
